Black Beans & Yellow Rice

Ingredients:

  • 2 cans black beans
  • 1 can diced tomatoes
  • 1 medium green pepper-diced
  • 1 medium onion-diced
  • 3 cloves garlic
  • 2 tbs olive oil
  • 2 tbs parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbs BKW Cajun Rub
  • 1 bag yellow rice

Directions:

  1. Saute onions, garlic, and green pepper in olive oil til soft.
  2. Add parsley, salt, pepper, and BKW Cajun Rub and cook for 2 min.
  3. Add diced tomatoes and black beans.
  4. Cover and cook on low for 15 min.
  5. While beans are cooking, prepare yellow rice according to package.
  6. Serve beans over rice.
  7. You can add sour cream as a topper.
