Big Kahuna Cajun Pork Roast


  • 5 pounds pork picnic roast
  • BKW Cajun Seasoning
  • 1 can of light beer
  • 10 to 12 cloves of garlic
  • BKW Barbecue Rub


  1. Use a knife to cut small 2-3 inch slits into the top of the roast.  Pack the slits with BKW Cajun Seasoning and plug the holes with the cloves of garlic.  Sprinkle BKW Barbecue Rub generously to the outside of the roast.  Massage the rub into the meat.
  2. Using a thin dish towel, wrap the meat in the cloth (this will help keep the rub on the pork while marinating).  Place the roast (in the towel) inside a plastic bag.  Pour in the can of light beer and marinade over night.
  3. After the pork has marinated, pre-heat your oven to 325 degrees.  Place the pork in a roasting dish and cover.  Roast the pork for 45 minutes per pound or until the internal temperature reaches 160 degrees.
  4. When the roast is finished, slice it and serve or use a set of tongs and a fork to pull it apart.  Top the pork with your favorite barbecue sauce and serve.  This recipe is great with BKW Potato Salad.
